Chocolate Chip Oatmeal Cookies
Posted by Celine on March 10, 2007
these crispy-on-the-edges, chewy-inside cookies were among the first ones I made when I got into baking, after finding the recipe here. I adapted it to my liking with time!
makes 8 large cookies
1/2 cup whole wheat pastry flour [scooped up and leveled]
1/2 cup quick-cooking oats
1/4 t baking soda
pinch sea salt
1/4 cup dark chocolate chunks
1/4 cup pecan pieces [or simply add a bit more chocolate, dried fruit, or other nuts]
2 (T) and a heaping 1/2 T chunky natural peanut butter
1 T vegetable oil [any mild-tasting oil will do!]
1/2 cup light brown sugar
2 1/2 T soy milk or other milk alternative
1 t pure vanilla extract
set oven to 425F. prepare cookie sheet with parchment paper or Silpat.
whisk all wet ingredients together until smooth.
ift flour, baking soda and salt together. add rest of dry ingredients to flour.
add wet ingredients to dry ingredients, mix until well combined.
divide into 8 equal portions, and place on cookie sheet. flatten a bit as these don’t spread much while baking.
bake for approximately 7 minutes: you want them to be golden brown on top.
leave on cookie sheet for about 5 minutes, then place on a rack to let cool completely

woohoo! will have to try that. I haven’t been successful at making my own almond butter thus far, though. it turns mealy no matter how long I leave the food processor running. have to buy a jar to try it your way.

Well Celine, hubby requested them again so he could take them on the road tonight. I’d say they were a hit with him. ;) You know what’s so cool about this recipe… I don’t even really need to measure. I just throw it all together in a bowl, bake, and voila! Love it! And they taste great, too, even without the chocolate. Thanks again. :D
June 20, 2007 at 5:45 pm
ps. just to clarify, I didn’t actually bake them in the bowl. ;) lol!

hahaha! Cassie, you’re a riot. I’m so happy he likes them so much. yeah, who woulda thunk chocolate wouldn’t be a necessity? :D

I just made these and they are the best! I made 8 cookies. I can only assume your 3 cookies were the size of dinner plates.

ha! yeah, I used to be into making really huge cookies but have switched back to more waist-friendly ones these days. I’m glad you liked them!

I have made these cookies so many times that I know the recipe by heart. They are so good. We get six cookies per batch. I just posted about them and gave you a shout out. I hope everyone tries them this holiday season! Way to go!

would it matter if I used fake peanut butter instead of the natural kind? i know it’s 100 times better, but the boyfriend refuses to have it on his sandwiches, and he’s really the only one who eats PB anyway :P

I’m sure it’d be just fine, Ericka. trust me, I had to deal with my own picky SO. ;p

Celine, baked these cookies today, yummy, except for the chocolate chips, i used sunspire organic choc chips and they taste like they have liquer in them. they don’t but…can you recommend any other chips? thanks, kristina

I often use Trader Joe’s chips, krislinatin, and Guittard’s are amazing too. I also sometimes go for a huge Trader Joe bittersweet chocolate bar that I cut into chunks of the size I choose: more elbow grease needed, but it’s sometimes even more rewarding & cheaper as well.

Awesome, thanks, I love ANY excuse to shop at Trader Joes!
