Cranapple Maple Compote

cranapple maple compote

1 cup fresh or frozen cranberries, rinsed
1 apple, cored, quartered, cut in small pieces [I refuse to peel my apples]
2 T unsweetened applesauce [optional, I had leftovers from some baking I did this weekend]
about 1/4 cup maple syrup
pinch salt
2 T OJ
1 T cornstarch
2 T water

place cranberries, OJ, maple syrup, and salt in saucepan, mix.
add apple, bring to a boil on medium heat, let simmer for 4-5 minutes.
mix cornstarch with water, add to cranapple mixture, bring to a boil, stirring constantly, and let simmer for 1 more minute, until mixture thickens.
place in a bowl and let cool. add pecans or walnuts to prettify.
