Minestrone

1 cup chopped onions
1 cup chopped green peppers
3 cloves garlic, minced
3 T olive oil
1 cup chopped celery
1 cup chopped carrots
1 dash cayenne pepper
1 t dried oregano
2 t fresh basil [dried is fine too]
1 1/2 cup cooked beans [your choice! I like white beans in it.]
1/2 cup uncooked small pasta
1 cup chopped tomatoes WITH juice [being more generous with this isn’t a problem, depending on what size of a can you happen to have, you can always tweak it with the amount of water]
4 cups water [more or less, depending on the amount of chopped tomatoes and their juice you went for. you can also replace the whole amount of water or half of it with vegetable broth too, or you can throw in a bouillon cube if you have it!]
1/4 cup chopped fresh parsley [dried is fine too]
salt and pepper to taste
use large pot! saute onions, garlic in oil until translucent, add peppers, saute for a bit. add celery, carrots, cayenne, oregano, and basil. mix well, cover and let steam for 10-15 minutes. add beans, pasta, tomatoes, and water.
bring to a boil and simmer until veggies are tender.
