Minestrone

1 cup chopped onions
3 cloves garlic, minced
1 cup chopped green peppers
1 cup chopped celery
1 cup chopped carrots
¼ t cayenne pepper
1 t dried oregano
2 t dried basil
1 1/2 cup cooked cannellini beans
1/2 cup uncooked small pasta
two 14-ounce cans (822g, total) diced tomatoes, with juice
4 cups water or vegetable broth, or combination of the two
salt and pepper, to taste
In a large saucepan, sauté onions and garlic in oil until translucent, add peppers, sauté for a couple of minutes. Add celery, carrots, cayenne, oregano, and basil. Stir well, cover and let simmer for 15 minutes. Add beans, pasta, tomatoes, water, salt and pepper to taste..
Bring to a boil and simmer until veggies are tender.
Yield: 8 servings
