Chocolate Gingerbread Cookies

recipe adapted from here…
makes 6 cookies
1/2 cup all purpose flour
1/3 cup whole wheat pastry flour [more than the original recipe calls for]
1/2 t ground ginger
1/2 t cinnamon
1/8 t cloves
1/8 t nutmeg
1/2 T cocoa powder
1/4 cup margarine, softened
1/4 C light brown sugar, packed
2 T molasses
1/2 t baking soda dissolved in 3/4 t boiling water
about 2 T soymilk [but wait until you're told to use it!]
1/4 C semisweet chocolate chips
preheat oven to 325F. prepare cookie sheet.
mix dry ingredients in medium bowl [except for sugar and chocolate chips], set aside.
with a handheld mixer, beat margarine together with sugar and molasses until smooth.
add 1/2 of the dry ingredients, as well as dissolved baking soda, beat some more, add rest dry ingredients, and add soy milk, little by little, until the dough is manageable and less dry. you don’t have to use it all OR you might have to use more, it’s up to you to see.
separate dough in half, place on cookie sheet, flatten a little [the cookies won't spread out too much]. bake for 15 minutes. let cool on rack for 10 minutes before carefully placing on a cooling rack.
