Orange Spritz Cookies

1 1/2 cup Earth Balance whipped margarine
1 cup granulated sugar
Ener-g egg replacer for 1 egg
2 tbsp soy milk
2 tsp orange extract
3 1/2 cups all purpose flour, unbleached
1 tsp baking powder
preheat oven to 375 F. cream margarine and sugar. add “egg”, “milk”, orange extract, mix well. stir together flour and baking powder, gradually add to creamed mixture, mixing to make a small dough. do not chill. [that's where I used my cookie shaper-distributor thingie, so if you don't have one, just roll abt 1 T of the dough, put on ungreased baking sheet and flatten just a touch.]
I baked mine for 8 minutes, they don’t tan much on top, but they do on the bottom. let cool on a rack, once completely cool, drizzle chocolate on the top. put in refrigerator for about an hour to let the chocolate set. the cookies are really soft, so if you prefer yours crispy, this might not be the recipe for you. makes…a lot. probably 50 cookies, depending on size.
for the chocolate drizzle, simply melt 1 cup chocolate chips in a double boiler or in the microwave, stirring often for them not to burn, and use a spoon or a fork to drizzle on top of cookies. if the chocolate is too thick to drizzle, add a tsp soymilk.
the dough is so great to work with! I’ve never tried to roll it out and cut shapes out of it, but I’m thinking it could be done.
variations: how about using lemon or other flavorings instead of orange?

teehee! whatever you do, just don’t bake them on a Silpat. sometimes, I love my Silpat, other times I just want to choke it dead.
