Spicy Soup
April 16, 2007 at 10:34 am | In recipe |I know, we all have our own recipes for soup and what does mine have to offer that others don’t? nothing, really. but that won’t keep me from posting the recipe anyway! ha.
1 T grapeseed oil [any oil is fine, really.]
1 small red onion or half a medium to large one, chopped
heat oil in a large saucepan, on medium high, for about a minute or so. add chopped onion, let cook until translucent, it takes a minute or two.
1 clove garlic, pressed
1 small green bell pepper, chopped
1 4-oz can jalapeƱo peppers, chopped
add to saucepan, let cook for a couple of minutes.
2 1/2 cups vegetable broth
1 t dried basil
1/2 t cracked black pepper
1 t chili powder
2 t dried cilantro
1 cup cooked kidney beans [don't forget to rinse]
1/2 cup frozen corn
1/3 cup tomato paste
add to saucepan, bring to a boil. lower heat, cover, and let simmer for 15 minutes.
serve with tortilla chips.
