Cranberry Orange Bread

1 cup all-purpose flour
1/4 cup sugar in the raw
1/2 cup granulated sugar
1/2 t salt
1 1/2 t baking powder
1/2 t baking soda
2 T vegetable oil
1/2 cup + 2 T soymilk
1/2 cup freshly squeezed orange juice [about 2 medium oranges]
zest of one medium orange
1 ener-g egg [1 1/2 t egg replacer whisked with 2 T warm water, until foamy]
1 cup fresh or frozen cranberries [cleaned and drained]
1/2 cup raw pecan pieces [optional, or can replace with walnuts]
prepare loaf pan with non-stick cooking spray. preheat oven to 375F.
sift dry ingredients [up to baking soda] together in a large bowl.
mix wet ingredients [up to egg] together in a smaller bowl.
mix dry & wet ingredients together, until just mixed. do not overmix!
fold in cranberries and pecan pieces, if used.
pour into prepared loaf pan. bake for 40-45 minutes, or until toothpick comes out clean.
let cool in pan for a few minutes once taken out of the oven. remove from pan, let cool on rack.

Celine, this bread looks wonderful! Another “American food” that I have to try. How do you eat it? Just by itself or topped with some jam?

just by itself!! it’s like what is usually called “cake” in Europe. a nice cup of tea or coffee on the side wouldn’t hurt.

Cranberry Orange bread is my favorite type of quick bread. My mom has been making it for years, and I always eat so much of it =)
