lemon and pepper biscuits

for lack of a better description: they tickle the tongue. quite
lovely, actually.
also, they’re more like savory cookies/crackers than traditional
american biscuit. flatter, obviously. I like them that way.
you could eat them as sweet treats though, spreading some lemony
cream cheese filling between a couple of them!
makes 11 cookie-sized biscuits
1 1/2 cup sifted all purpose flour
1/2 cup Earth Balance whipped margarine or other vegan margarine
1 t grated lemon zest
1/2 t black pepper
plain soy milk [amount will depend on the consistency of the dough,
but about 2 T]
1 Ener-g egg replacer
another Ener-g egg replacer to brush biscuits tops
fine crystals sea salt
use your fingers to mix flour and margarine until crumbly texture is
obtained. add zest, pepper, egg replacer, and mix well. you want to
obtain a stiff dough, so add the soy milk little by little until you
obtain such a dough; kneading it with your hands at this point might
be necessary. once you’ve accomplished that, form a ball, and roll it
out on a lightly floured clean surface to about 1/8 of an inch.
using whatever cutter you want to, cut biscuits out of the dough,
re-form ball and roll it out again until you’re all out of dough.
place biscuits on lightly greased baking sheet.
apply a little of the egg replacer on top of the biscuits, sprinkle a
little salt on top.
bake in a preheated oven at 350F for about 12-15 minutes, or until
bottoms are golden. the tops won’t get too tanned. serve hot or warm
or cold. it’s up to you!

When I was a vegetarian I used to make a lemon-pepper-cheddar bread and I miss it. I haven’t veganized it yet. (Vegan cheese is hard to get here…and if it doesn’t taste like cheese)I am convinced your biscuits will make an excellent substitute. Thank you!

I can’t wait to make more and in different versions too.
one thing I forgot to mention in the recipe [and that I will edit right now] is that you have to use your hands to knead the dough at one point, it’s so stiff.

Hey, Celine!! Great biscuits. Those look really wonderful. Flaky goodness!! i would so want to try those with some sun-dried tomatoes…

haha!! you know, I bet dogs would love these ones too. they’re not too peppery, so that might work. :D
I want to try them with some whole wheat flour next time, to see if they don’t get too crumbly. oh, the possibilities!

I made them today and yes they satisfied my cravings. They were so, so, so good! I used a flour that might be called “light” or “half” whole wheat flour and I am quite sure you can use whole wheat. I wrote a bit about them on my blog.I am quite sure these will become a new staple of mine!
