belgian-style seitan stew with dark beer

once more, this was made with the VWAV seitan recipe made à la façon Lachesis.
the recipe for the stew comes from Vegan Planet. I didn’t have white wine vinegar, so I hesitated between using white cooking wine, and white balsamic vinegar: the vinegar won this round. I also used the half of a huge white onion instead of a large yellow one. my belly will thank me for this later, I’m sure. the beer I used was part of the one that’s on the side, an oatmeal stout from Trader Joe’s. I didn’t add salt since there’s already enough sodium in the vegetable broth [also from Trader Joe's].

other than that, I was pretty faithful to how the recipe was written.

I scooped the stuff up on top of whole wheat fettucini [guess where they're from???], and voilà! a delicious meal coming up.

  2. it’s absolutely one of the best dishes I’ve ever had. seriously. I had it on top of steamed, naked brussels sprouts. yum! perfection.
