yet another scrambled tofu version

yeahyeahyeah, I have a scrambled tofu issue, I know. I’m typing it up here because I can, but you know you’re free to ignore me and my tofu addiction. but really, I can stop anytime. I know it. you know it. we all know it. wheeeeee!

1 T safflower oil
1 lb extra firm tofu, drained, pressed, and it likes it like that!
1 scallion
handful frozen green peas
1/4 t turmeric
1/2 t dried basil
1/2 t dried parsley
1 T tamari
1 T nut. yeast
ground pepper, to taste
1 T tomato paste

heat oil and scallion in pan on medium heat, crumble tofu and add to oil.
throw in rest of ingredients [except green peas] and let cook for 5 minutes. add green peas, cook for another 5 minutes. enjoy!

  4. I have not had scrambled tofu in forever! In fact, I cannot even remember the last time I had it…but your post and lovely photo inspired me! I am going to give your recipe a try!
