quick-rise potato bread [for bread machine]

Posted by Celine on May 18, 2007

quick-rise potato bread

most delicious one thus far!

for a 2 pounder:

1 cup and 3/4 warm water [115-125F]
3 T vegetable oil
2/3 cup instant potato flakes
1 1/2 t salt
3 T granulated sugar
4 cups bread flour
4 t quick-rise yeast

mix potato flakes, salt, sugar, and flour together in a large bowl.
throw water and oil FIRST in your bread machine. add flour mix on top of wet ingredients, making sure you cover all wet area before adding the yeast. once that’s done, add yeast, start your machine by choosing the “rapid bread” selection. [or whatever it is called on your machine]
follow manufacturer’s instructions.
when the bread is done baking, promptly remove it from the machine and place on a cooling rack until completely cool, so that it doesn’t get soggy.

I sort of want a bread machines because they’re easier, but I also like kneading it for some reason. Have you tried this without the machine? It’s been a long time since I had potato bread, and I sure what I had wasn’t homemade.

I haven’t tried it without, but later on that day I was thinking, it’d be real simple to make without a machine.
simply use the same amount of stuff, mix it in a bowl, knead until you get a nice dough [probably 5 minutes in all], pour into a prepared loaf pan, cover with a towel and place in a warm, non drafty area for one hour [you want it to have doubled in size, so timing might differ], bake at a 375F oven for about 40 minutes, should do it. now keep in mind I am not SURE about the baking length, but you can figure it out [check after 30 minutes perhaps] by having a look at it.
it’s not ideal since it hasn’t been tested before, but hey.

Thank you! I’ll try this then.
