bi-quinoaed salad

it’s simple, refreshing, and perfect at the end of a hot summer day.
serves about 4 as a main course, about 6 as a side dish.
1 cup “white” quinoa, rinsed, drained
1/2 cup red quinoa, rinsed, drained [if you cannot find red quinoa, just use the traditional one instead!]
1 small red pepper, diced
2 cups frozen corn
3 scallions, minced [if you don't like scallions, feel free to use shallots or onion]
2 T fresh parsley, chopped
2 T extra virgin olive oil
black pepper, salt: to taste
zest of half an orange [about 1/2 T]
3 cups vegetable broth
3 T seasoned rice vinegar
2 T toasted pine nuts
bring broth to a boil in a large saucepan, reduce heat to low, add quinoas, and cover. let simmer until liquid has been absorbed, about 15 minutes.
heat olive oil in a skillet, add scallions and bell pepper, let cook for about 3 minutes, add corn, let cook for another 3 minutes.
once quinoa is ready, add veggies to it. throw in zest, black pepper. serve hot if you want it that way. if you’re gonna have it as a salad, let cool, and throw in vinegar before serving.
variations: throw in 1 cup of [cooked] kidney beans or black beans instead of 1 cup of corn. or replace same cup of corn with 1 cup of frozen green peas. or mix it up and have [colorful] fun!
