fresh salsa
May 28, 2007 at 10:23 am | In Uncategorized |makes approximately 1 1/2 cup of salsa.
3 big, ripe tomatoes, peeled, seeded, and diced
juice of 1 lime
4 scallions, chopped finely
1/4 cup minced fresh cilantro
generous pinch sea salt
1 clove garlic, pressed
combine everything in a large bowl. serve at room temperature.
and oh. have you seen these babies?
there’s nothing I love more than eating them raw with a little Earth Balance margarine mixed with a pinch of salt. am I weird or am I weird?

Thanks for the salsa recipe–it looks great! I have been looking for one that is fairly simple and will still taste good, and yours looks like it will fit the bill. I have cilantro growing in a little pot on my window sill, and I am excited to use it!!

these little potted plants are so great to have! I’m thinking of going for a few, but am worried that my anything-but-green thumb might do a mercy killing on them, or something. I’ll look into it. hope you’ll like the salsa!

Ha ha–I have a black thumb! I killed all of my herbs last year, but I am trying again! I say go for it…you’ll have some herbs for a little while, at least–even if the plant does die!

and it’s the best way to learn too, you’re right Courtney. only thing is, I’ll have to find a safe place for them, with my cats. not that they’re dangerous for the cats, but the cats would be dangerous for the plants! ;p
