Zippy Potato Salad

potato salad

I used baby dutch yellow potatoes for this salad. scrubbed them, cleaned them, halved them, placed them in a huge pot filled with boiling water, and cooked them for 15 minutes.

and here’s the kick-in-your-pants dressing I used:

3 T ketchup
2 T red wine vinegar
4 T extra virgin olive oil
3 T sweet pickle relish

whisked it all together, and poured it onto the potatoes, adding about 1/2 cup frozen green peas to the mix. you know, so that there’d be some green in there somewhere.
