Potato Walnut Bread
June 14, 2007 at 11:11 am | In recipe |1 T grapeseed oil [canola oil, vegetable oil work well too]
1 T molasses
3/4 cup pure water, at room temperature
1 t sea salt
1/2 cup chopped walnuts
1/2 cup whole wheat flour
1 1/3 cup white bread flour
1/3 cup potato flakes
1 t bread machine yeast
if using a bread machine:
place all ingredients in your bread machine, following order recommended by manufacturer.
set machine on DOUGH cycle.
if not using a bread machine:
heat water to 100F.
throw all ingredients in a large bowl and mix well, turn out on lightly floured surface and knead until smooth and elastic (5 -8 minutes). shape into a ball.
cover with plastic wrap, let rise for 90 minutes.
lightly grease baking sheet with non-stick cooking spray.
divide dough in two, shaping into two loaves. brush with oil. cover with towel, let rise for 30 minutes.
preheat oven to 375F.
bake 20 minutes or until golden brown, and bottom sounds hollow when tapped. I didn’t find mine looked shiny enough even though I had applied a layer of oil on top, so I put some margarine AFTER it was baked, right after it came out of the oven, so that the marg’ melted on its own while being applied with a brush. it turned out beautifully!
let cool on rack.

thank you Mihl! yeah I don’t want to sound conceited or anything, but it really is my absolute favorite! it’s even better than the one I used to get in Switzerland, at Migros, don’t know if you have the store in Germany but I think they opened stores in France, Belgium, and Germany, not sure. anyway, try it and let me know what you think! I value your opinion like whoa.

Never heard of Migros…but now that I have the recipe for your bread I don’t care. I am going to a garden party this weekend and I have to make some decisions about what kind of food to bring. So hard! Even harder with your bread around. If I bring ten different things, everybody things I am the vegan that can’t get enough…

i would totally make this (but sans walnuts… i know, that makes no sense, but i’m not the biggest fan of walnuts around!) - and how fab that a bread machine isn’t necessary. (i don’t have one!) i love the colour - a warm, gorgeous brown!
