Green Tea Mini Cakes

Green Tea Mini Cakes

makes 4 mini cakes [whatever shape you have/prefer is fine!]

3/4 cup all-purpose flour
1/4 cup whole wheat pastry flour
2 t baking powder
1/2 t salt
1/2 cup powdered sugar
1/2 cup rice milk
1/4 cup melted EB whipped margarine
1/4 cup vanilla soy yogurt
1/2 t pure almond extract
3 t matcha green tea powder

preheat oven to 350F, prepare your mini molds with non-stick cooking spray.
sift flour, salt, sugar, and baking powder together in a large bowl.
in a medium bowl, whisk soy yogurt, almond extract, melted margarine, and milk together.
add wet ingredients to dry, do not overmix.
place batter into your mini pans, filling 2/3 of the way.
bake for 20 minutes or until toothpick inserted in center comes out clean.
let cool in molds on cooling rack for at least 15 minutes, remove from mold and let cool completely before decorating, if you choose to do so.

an idea: sprinkle with powdered sugar for a simple, yet pretty decoration. use a fine-meshed sieve in order to avoid clumps.

    Mihl: there is a slight tea taste, but to be honest, the almond extract is the most powerful thing in it. I’m personally NOT a fan of green tea, so that’s a good thing it’s not too overpowering.

    teehee, Vegetation, I sound like a high schooler all the time, so you won’t be judged here. ;)

    TB: there’s a conundrum about whether they’re bunnies or wallabies or some other animal. personally? I think they’re cute and that’s all that matters. ;p
