Citrus Soygurt Muffins
June 24, 2007 at 2:03 pm | In recipe |makes 12 standard muffins
2 cups all purpose flour
3/4 cups granulated sugar
1 T baking powder
pinch salt
zest 1 orange
zest 1 lemon
zest 2 limes
1/2 cup safflower oil
2 x 6oz vanilla soygurts
preheat oven to 350F. place baking cups in muffin pans.
sift all dry ingredients together, in a large bowl.
whisk wet ingredients and zest together, in a medium bowl.
mix in wet in dry, do not overmix.
spoon batter in baking cups.
bake for 20 minutes. let cool on a rack.

this recipe is very intriguing - I’d like to try using soy yogurt in muffins. oh by the way, back to that Ricera issue - I checked the label again while at Whole Foods yesterday, and the ones sold there still contain Vitamin D3. Hopefully they will change it soon so that they can legitimately call their products vegan!

This is way belated, Celine, but I’m loving the new template! Sky blue-all shades of blue actually-is my favorite color. So calming.. :~) I love how these muffins look, very moist but not too dense. Not that many ingredients, either..I’m eating too much starch right now, but I’ll let you know how these turn out next week sometime. Can’t wait!
