General Tao’s Seitan with Yellow Cauliflower and Udon Noodles

made using one of the baked seitan steaks, sliced into strips, cooked in peanut oil with the already steamed cauliflower, until crispy.

sauce made following the famous vegweb recipe, with a few changes.

1 medium shallot, minced
2 huge garlic cloves, pressed
1 T peanut oil
2/3 cup veggie broth
2 T reduced-sodium soy sauce
2 T light brown sugar
1 t red pepper flakes
1 T sherry
1 T white wine vinegar

cook shallot and garlic in oil for a couple of minutes, on medium heat. add broth, soy sauce, sugar, red pepper, sherry and vinegar. let simmer for a few minutes.
mix 1 T arrowroot powder with 2 T warm water in a small bowl, until fully dissolved. throw this into the simmering sauce, let cook until it all thickens a bit.
remove from heat, mix in seitan strips and cauliflower. serve immediately, on a bed of Udon noodles.

THIS LOOKS DELICIOUS! cauliflower is one of my all-time favorite vegetables. i bet this would be great with tofu as well! also, the color of the cauliflower was retained nicely during the cooking process! when i have prepared yellow or green or purple or zebra striped (just kidding) cauliflower in the past, the color usually changes or fades.

  3. That looks so yummy! I’ve just purchased all the ingredients to try and make your seitan steaks so I am very excited. Wish me luck (I’ve never made any form of seitan before, your recipe looks the easiest and yummiest)!

    i love general tsao’s tofu at a favorite pan asian restaurant but they deep fry the tofu. i’ve never tried to make my own sauce and do it at home but you’ve inspired me to try with the seitan roast i now have in the freezer sometime soon.

  6. U can’t spell Udon noodles w/out U. And i’m glad U made this. The baked seitan steaks are insanely groovy looking in that sauce. Wow. i’m glad i just ate (don’t ask what! it wasn’t anything like what you have here!!) or else i’d be drooling on my keyboard at work and shorting out the entire noozpaper…
