Chocolate PB Rice Treats

these treats have been making the rounds lately, so I caved in and made some for the husband and myself.
they’re originally from “How It All Vegan”, but slightly adapted.
first of all, I halved the recipe.
1/2 cup light brown sugar
1/2 cup brown rice syrup
1/2 cup chunky all natural peanut butter
3 cups puffed brown rice
a little over 1/2 cup vegan chocolate chips
place sugar, syrup, and peanut butter in a large saucepan. heat on medium heat until it gets a bit more liquid-y. throw in puffed rice and chocolate chips, OR wait for the syrup mixture to cool down a bit so that the chips don’t melt. personally, I prefer them melted. mix well and place in a 9×9 baking pan coated with parchment paper. grab a piece of parchment paper to press down for less mess. let cool at least one hour before attempting to cut.
I cut mine into six pieces, but that part’s really up to you.

Lovely! I can’t get over how perfect they look, like something store bought! Thanks for the recipe, too- I may just have to play around with this one.

it’s funny because even my mom made them! she found them mega tasty too. vegan treats for the win!
