These treats have been making the rounds lately, so I caved in and made some for the husband and myself.
They’re originally from “How It All Vegan”.
Chocolate PB Rice Treats:
1/2 cup light brown sugar
1/2 cup brown rice syrup
1/2 cup chunky all natural peanut butter
3 cups puffed brown rice, more if the mixture is overly wet
1/2 cup vegan chocolate chips
Place sugar, syrup, and peanut butter in a large saucepan. Heat on medium until it gets a bit more liquid-y. Throw in puffed rice and chocolate chips, OR wait for the syrup mixture to cool down a bit so that the chips don’t melt. Personally, I prefer them melted. mix well and place in a 9×9 baking pan coated with parchment paper. Grab a piece of parchment paper to press down for less mess. Let cool at least one hour before attempting to cut.
I cut mine into six pieces, but that part is really up to you.
