Pumpernickel Bread [no machine involved], CBC Tofu Cubes, A Simple Salad…

pumpernickel bread

pumpernickel bread from here, with modifications. explanations coming up soon.

cbc tofu cubes

CBC tofu cubes: C = coconut B = basil C = curry

4 T full-fat unsweetened coconut milk
1 generous t [less or more depending on your pref.] green curry
1 t dried basil
1/2 T agave nectar

whisk all ingredients in a small bowl.
grill your cubed super firm tofu in a generous amount of peanut oil [2 T], until golden brown. add coconut mixture and let cook some more until crispy.

serve on a salad —>

a simple salad

made of clover sprouts, chopped green bell pepper, champignons de Paris aka shrooms [mixed with some lemon juice to keep oxidation at bay, if not serving immediately], baby tomatoes, and chopped fresh parsley. all of it sprinkled with a pomegranate-acai-black currant vinaigrette adapted from Vegan Planet’s raspberry vinaigrette. whew.

in other news, I am really excited because my favorite local non-profit organization, The Cat People, will be having some kind of sale next week and a long time ago I had offered to bake goodies or help in any way I could: they need cookies to be baked and got in touch with me. yay! I’m still not sure which cookies I’ll go for. they need to be smaller than the usual kind I make since they just need to be nibbled on, not to replace a whole meal [or two]. ;p

yeahyeahyeah I know...

a friend of mine also needs cookies for her upcoming gallery opening, and she ordered a lot of normal [for me] sized cookies for the event. I will be busy with it all in the coming months and I couldn’t be happier about it. I really need to get myself some kind of job in the field, eh?

  3. Wow, I’ve never seen such a pumpernickel bread, but this looks like an interesting variation. That shape looks very professional. Clover sprouts? How to they taste?
    So cool that you are going to bake all that stuff. I am sure they will love your cookies and will hire you right away for future events. Oh, how love to come and taste your food at those events. I hope you’ll let us know which cookies you are going to bake. Have a great weekend!

  7. I know, it would appear they don’t see pumpernickel bread as us europeans do over here, but it’s mighty tasty, regardless!
    to be honest, I don’t see a big diff between all types of sprouts. they don’t taste too strong, which I kind of like.
    someone suggested snickerdoodles! I think I’ll go for a batch of these, and a batch of orange/almond/chocolate chips. not too usual and not too crazy either, that should do the trick.

    me too, bazu, I really hope they do. they do an amazing job over here, and they should get more help from the city too.

  10. Yum! I’m going to have to try some CBS seitan and salad come summer (although after a bit of a frosting fest this afternoon my body is craving some fresh veggies right now!). Also I am officially in love with Buffy. I hope you don’t mind if I hop her on my flying carpet and bring her over?
