macaroni salad

ehhhhh, macaroni!

something to help the husband cool down when he gets home from work tonight!

to make the dressing:

1 package Mori Nu Silken tofu [firm], drained
1 T stoneground mustard
1/2 cup sweet relish
1/2 t cayenne pepper [more or less, depending on how hot you like it!]
1/2 t sea salt
2 T white balsamic vinegar
1/4 cup extra virgin olive oil

combine everything in a blender, except for oil. blend until smooth. drizzle oil in and process some more until completely blended. makes approximately 2 cups.

combine with:

[cooked and rinsed] elbow macaroni, chopped celery, baby tomato halves, minced shallot, and chopped fresh parsley.

  4. sweet me? bah! I wish. I’m a lot grumpier than I appear on here. that’s why I’m keeping the husband from joining in on the talk so that the truth isn’t revealed! ;p
    but yes, he liked the salad. is anything better than pasta? yum, pasta. thank you girls!
