italian herbs bread

Posted by Celine on July 22, 2007

italian bread

not a bona fide italian bread, just called that way because of the italian seasoning it contains.

1 cup + 3 T warm water [115F]
3/4 t olive oil
1 t sea salt
2 T sugar in the raw
4 t soy milk powder
4 t italian seasoning
2 cups bread flour
1 cup whole wheat flour
1 T bread machine yeast

place ingredients in order recommended by bread machine maker. set on SUPER RAPID cycle.

I think it’s a bit more crumbly than what I’m used to, because of the whole wheat flour I “threw” in there, but it’s good, regardless.

Abondanza, Celine. i’m not sure who loves bread more, peeps in my family (incl. myself) or Mattie. Did i tell you she once pulled a whole challah off my parents’ dining room table? She jumped up and got it. And let me tell you, this bread was not close to the edge. i am still not sure how she did it. She’s agile, but not THAT much so. But when it comes to bread, she’ll do anything. Curious what the soy milk powder does, or adds, to this??

Wow, I missed a lot of mighty tasty stuff this weekend, methinks. YOU are a goddess!

K! your Mattie is my hero. end of. :D
the soy milk powder actually adds a tiny amount of nutrition value, it makes the bread softer, more elastic, and it also gives a bit of flavor. but is it absolutely necessary? absolutely not.

Mihl: nah, I just don’t like being bored. and with the amount of dishes to do once the baking and cooking is done? you know the drill: there’s no way anyone could be bored. ever again.

Thanks for that info. i did not know that about soy milk powder. Good to know how it helps not only the nutritional content but also the feel of the bread as well as the taste. THANK YOU! And Mattie sez THANK EWE!!
