'fu, noodles & veggies in a spicy PB sauce

start by preparing your favorite peanut butter sauce.

tofu
16 oz super firm tofu or same amount of extra-firm, pressed like it’s never been pressed before!
2 T peanut oil
1 t curry powder [you can use curry paste too: green or red, whatever you like best!]
1 T cooking white wine [you can use "milk", broth, water, creamer, whatever: it's just to make the curry powder liquid so that it goes all over the tofu instead of getting stuck to some and not the others]

veggies
1/4 cup red onion, minced
1 medium carrot, chopped in small pieces
1/2 red bell pepper, seeded, white parts removed, chopped in small pieces
1 small can water chestnuts, cut in half-moons
1/2 T dried parsley
1 T e. v. olive oil
generous pinch of salt

2 bunches somen noodles

cut your tofu in cubes. heat oil on medium high, place your cubes in it and let cook until golden and crispy for about 10-15 minutes, turning often and making sure every side gets its turn to “tan”. whisk white wine and curry powder and throw onto tofu once it’s reached its crispy point, mixing thoroughly so that the curry gets all over the place. set aside.

in the meantime, work on your veggies. place your oil at the bottom of a large saucepan. heat on medium, add onions and let cook for 2 minutes. add carrots, cover and let cook for 5 minutes. add pepper and chestnuts, parsley and salt. let cook for another 2 minutes, [don't let your veggies get mushy!], set aside.

cook your noodles following the instructions on the package.

place tofu and veggies in a large bowl, stir to mix them up. throw noodles in on the fun and stir some more. place on serving plates. drizzle with PB sauce and serve warm.

serves 2-3 people.

  7. I had this today and wow wow wow, it was awesome! Even my pb-hating boy loved in and said it was one of the top-3 thing’s I’ve ever made.
    I used the “sauce” from the cbc tofu to make the cubes as I was afraid of making it too spice and it was perfect. thanks!
