Pistavocado Rice Salad

pista-vocado rice salad

1 1/2 cup jasmine rice, cooked [1/2 cup uncooked]
half of a medium, ripe avocado
juice of one half of a lemon
1 T e.v. olive oil
1 T seasoned rice vinegar
2 T red onion, chopped or cut to your liking
1/4 t cracked [or not] black pepper
pinch of sea salt
scant 1/2 t dried basil
scant 1/2 t dried parsley
1/4 dried thyme
1 1/2 T pistachio nuts, halved [keep a couple or more whole, for decoration]

juice lemon in large bowl with your lemon press [don't wash your press just yet! use it to puree the avocado, it works well], add oil, herbs, pureed avocado, onion, pepper, salt, pistachios; mix until blended.
add rice and stir until covered with sauce. let chill for a couple of hours before serving.

serves 1 or 2 depending on if main course or not.

    1 cup uncooked equals 3 cups cooked, so 1/2 cup uncooked is what you need.
