“Nutella” frozen soygurt
July 27, 2007 at 7:59 am | In recipe |inspired by this, so feel free to use hazelnuts instead of almond meal. I didn’t have hazelnuts, so I made do.
3/4 cup almond meal, toasted in a pan, stirred constantly until the aroma comes and tickle your nostrils
2 T unsweetened cocoa powder
1/2 cup icing sugar
1 T peanut oil
1/4 t vanilla extract
1 1/2 cup vanilla soy yogurt *
1/4 cup chocolate chips
colorful sprinkles
throw the almond meal, cocoa, sugar, oil, and extract in your food processor. process until it turns into a paste. add soy yogurt. process all of it [EXCEPT chocolate chips and sprinkles] until well blended.
let chill in the fridge for an hour or so.
throw into your ice cream maker, following manufacturer’s instructions. add 1/4 cup chocolate chips during last five minutes of churning.
let set in the freezer for a bit longer, if you want to form perfect ice cream scoops.
scoop into sugar cones and roll in colorful sprinkles, for some extra fun. and a long lasting, guaranteed sugar high.
* [if you cannot find soy yogurt or are allergic to soy, try coconut cream, or full-fat coconut milk. it will change the flavor, obviously, and make the total amount of fat higher but come on: live a little. you might want to taste the prep to make sure there's enough sugar too, since coconut cream/milk doesn't have any but soy yogurt does...you might also want to mix in 2 T of arrowroot to the coconut and bring it to a boil, then immediately remove it from the heat, to make sure it's a bit thicker.]

HOW TOTALLY FUN. As soon as i saw the photo, i got this big ol’ grin on my face. Sugar high, yes, but nothing says HAPPY like sprinkles… Somebody needs to get an ice cream maker. Maybe for Hanukkah :) if i can wait that long!

Vegetation: try it with coconut cream or full fat coconut milk, instead of soygurt. it might be a bit less creamy [but that's not even sure considering the amount of fat in coconut cream], but it’ll taste great, maybe even better.

also, Vege, you can make ice cream without an ice cream maker, but it might not be exactly as creamy again. just process as mentioned above, place in fridge for 30 minutes, process again, and do this several times to avoid getting ice crystals, and until you’re satisfied with the texture of it.

ps: of course you might want to forget about the chocolate chips since it might be a bit hard to fold them in once the ice cream has taken a little, and you don’t want to put them in when you still have to run the food processor.

Hmmm thanks for the idea’s Celine. Now I’m going to HAVE to try it. Of course I could do the tin can and salt thing and put the kiddies to work rolling it around the living room ;)
