Coconut Pecan Swirl Loaf & PB Loaf with Jelly Swirl

PB Loaf with Jelly Swirl

1/2 cup creamy natural peanut butter [room temp!]
1 cup plus 1 T pure water [room temp too!]
1 1/2 cup bread flour
1 1/2 cup whole wheat flour
1 t sea salt
3 T light brown sugar, packed
2 t bread machine yeast

if using a bread machine:
place all ingredients in the order recommended by manufacturer. set on dough cycle.

if not using a bread machine:
warm water to 100F, sprinkle yeast on top, whisk a little, let sit for 5 minutes.
throw all ingredients in a large bowl and mix well, turn out on lightly floured surface and knead until smooth and elastic (5 -8 minutes). shape into a ball.
cover with plastic wrap, let rise for 90 minutes.

*NOTE: the ideal way of having your bread rise to its full potential is to place it in a warm, draft-free area: what better place than your oven?
preheat it [about 5 minutes prior to placing your loaf to rise in it] to its lowest setting for 1 minute, turn it off, and place your rising loaf in it for the full 90 minutes.*

in the meantime, prepare coconut pecan filling:
1/4 cup powdered coconut [if you only can find shredded or flaked, simply place it in your food processor and press pulse until you get a powder-like consistency]
1 t ground cinnamon
1/4 cup chopped pecans
1/4 cup light brown sugar, packed [you can use white if you prefer, it has less of a tendency to leak]

mix everything in a small bowl, set aside.

once dough has risen either in the bread machine or in the warm area:
place dough on a lightly floured clean surface, roll into a 15×7-inch rectangle. brush entire surface with water, spread coconut pecan filling on top, and roll tightly like for a jelly roll, starting with narrower side. once that’s done, pinch the loaf edges together tightly to prevent the filling from leaking.
place into your prepared pan. cover with plastic wrap again, let rise for another hour.

preheat oven to 375F —> remember to take out your loaf from the oven before you do this, if you placed it there for the second rise!!!
place your loaf pan in the oven and bake for 40 minutes. since tthe peanut butter-based bread browns rather quickly, you’ll want to cover it with a piece of foil after twenty minutes until it’s completely done.

remove from pan, let cool on a rack and enjoy!!

variation:
if you want to make a PB Loaf with Jelly Swirl, simply replace the coconut pecan filling with 1 cup of jelly or jam of your choice. jelly has a tendency to leak, though, so jam’s thicker consistency might be preferable for this. regardless, messy’s delicious. ;)

    the PB w/ jelly swirl loaf is genius!! I love PBJs, and this eliminated the step of spreading the condiments on the bread :0)

    ah, i agree with veggiegirl. this looks so good! my mom and i came to the conclusion that we think our bread maker is dead. :( so yay for making this in the oven until we invest in a new one (hopefully)!

    aw, you’re so sweet. sadly yes, after a few attempts to see if it would work, nope. but of course bread by hand can be just as tasty. i think i want to get some mini loaf pans.

    I love my mini loaf pans! if you ever make the no knead bread from Vegan Vittles, try to use them instead of a normal sized pan!
    plus, they’re so cute. :]

    nope, i don’t think so either. my mom always overfills regular sized muffin cups on purpose to make them bigger, but that way they just don’t come out right. ahah so 10 bucks or so is worth a new pan :D
