curried tempeh salad

served on still warm whole wheat pumpkin bread.
I’m usually not a fan of tempeh, but this recipe definitely makes me like it a lot more.
looks a lot like this one but with a few changes and additions. I thought I’d post it anyway.
1 8-oz tempeh package, poached [place in medium saucepan, cover with water, bring to a boil, lower heat and let simmer for 15 minutes]
1 small green bell pepper, steamed [place in medium saucepan, cover with water, bring to a boil, lower heat and let simmer for 3 minutes], and chopped
1 carrot, grated
2 T golden raisins, re-plumped [let sit in hot water for 10 minutes, drain well]
2 T white onion, chopped
1/2 cup soy mayo
1/4 cup sweet relish, drained
1 t agave nectar
2 t curry powder
1 T seasoned rice vinegar
sea salt, to taste [optional]
black pepper, to taste [optional]
1/8 t cayenne pepper [optional]
in a medium bowl, throw soy mayo, relish, agave, curry, vinegar, salt, pepper, cayenne [if using], and stir well until blended.
crumble your tempeh with your fingers, on top of the dressing. add your bell pepper, onion, raisins, and carrot. mix well until everything is coated with the dressing.
let chill for at least one hour before serving.
use as a sandwich filler; enjoy on top of lettuce and other raw veggies, or simply as is on its own.
serves 2-4, depending on use.

Looks great, Celine! I used to not be such a fan of tempeh but nowadays I actually love it even more than tofu! Just ordered another case of tempeh recently and finally got the call that was in (yay!) I’ll reserve a pack to try this out. :)

more than tofu, Cassie? I hope I get to that point. not that there’s anything wrong with being a worshiper of zee ol’ tofu, but I just wish I liked tempeh more than I do.

Hi Celine! It took a while, and some experimentation, but yeah… more than tofu. And I do love tofu!! :) One of the locally owned stores in town orders it in for me from a company in British Columbia that makes it (Green Cuisine). I like the plain soy tempeh the best. :)
