Cassie’s Beer Chili
August 18, 2007 at 10:35 am | In Uncategorized |Cassie’s Beer Chili has been made and is waiting until tomorrow to be eaten, so that the flavors can marinate and be enjoyed even more. I can tell you it smells insanely good in here, and that tomorrow never looked so far away!
I just made a few changes:
- I halved the recipe
- used 2 chopped carrots because I had no bell peppers
- made a mix of 1 can kidney beans and 1 can pinto beans
- used oatmeal stout instead of lager
I might shred a little of the Colby Cheez so that I can start using it up. it’ll be especially good considering Cassie’s Chili doesn’t have a lot of sodium in it, which I appreciate a lot since you might know by now that I am salt-o-phobic. or something.

I was planning to make that chili too. I was quite sure it would be insanely good. Still have to make it though.

I just looked at the weather forecast for the week and it’s looking to be chili weather! I’ll have to try this recipe soon.
I eagerly await the recipe for the pumpkin chocolate brownie cake, it sounds like heaven.

Oh, how on earth do you do all that you do, Celine! You amaze me. :) Pumpkin Choco cake sounds like such a PERFECT dessert with the chili! Will be waiting for your yummy-looking cake recipe. ;)

chili weather! can’t wait to get more days like this. it’ll be around 90 degrees F here this weekend, but it’s rather cool compared to what we’re used to.
you’re welcome, Cassie! thank YOU for coming up with a wonderful chili recipe. I’m pacing back and forth wishing it was Sunday already. I’m thinking of serving the chili with the tomato couscous I thawed from the other day. [it's by itself, just tomatoes and couscous, basically.]

i want me some of that!
after i bought a can of vegetarian chili, thinking i’d add things to it.. it smelled gross and reminded me of wet dog food, that just put me off. so this looks much much better looking than canned, eek.

I can’t take full credit for that one as it was inspired/adapted from another recipe. I changed it around quite a bit, but still wouldn’t feel right taking full credit. ;) And oh, what a fantastic idea to serve the chili with couscous and tomatoes! I think I’ll do that with some leftovers in the future! What a wonderful idea!! You’re brilliant! Post a pic! :D

oh yes I agree Hilary, once you cook fresh stuff, it’s tough to go back to canned. that’s too bad in a way, but good for our palates to become a bit pickier too!
I will post a pic, Cassie! looking forward to it already. and you know, after you change a recipe quite a bit, it becomes your own. ;)

Yum, that chili sounds amazing! Did you love it or did you love it? I would never have thought of putting beer in chili… fabulous.
