chou-fu salad

I feel kinda silly writing a recipe for this, but hey, I like writing down some of the stuff I make when I really like it so that I know how to re-create it if the mood strikes. don’t hate.

I was craving something mega simple and rather light because let’s face it, I couldn’t stop eating yesterday. baaaaaaaaaaaaaad.

I bought a head of cauliflower [chou-fleur, hence the title], cleaned and trimmed it into small florets, and placed it in a large saucepan filled with water [not boiling yet], brought it to a boil and let it cook for 6 minutes. I put about 1/2-1 t of turmeric to create the yellow color.

I fried cubes of super firm tofu [I always feel I'm talking about a super hero. which tofu is, in a way] in 1 T of peanut oil, let it work its magic for about 10 minutes, turning it often in order for it to be crunchy and brown.
I threw in about 2 T of plain soymilk mixed with 1/2 t garlic powder, 2 t italian herbs, and 2 t all purpose seasoning, at the very end of the cooking.

add a few thinly sliced radishes, a little bit of green onions [including some of the green part, for color], and a drizzle of seasoned rice vinegar and you’re set.

  6. It looked soo good.. until I saw it had cauliflower! That’s one vegetable I have yet to conquer, I love broccoli now, and sweet potatoes and ehm.. other vegetables I used to hate, but not cauliflower yet!

  12. yay, cauliflower-lovers all around! I wish it were green so that it’d be yet another incentive to eat more of it. broccoli’s good, but I still prefer cauliflower.
