beer bread ballons

they’re like little clouds! so fluffy and light. oh, and delicious too. the taste of beer is definitely not overwhelming at all, I could barely tell it was in there.

for 12 rolls:

3/4 cup beer [leave open for 1 hour to let it go flat]
1/3 cup pure water
1 T vegan margarine, at room temp.
1 1/2 cups bread flour
1 1/2 cups whole wheat flour
2 T vital wheat gluten [optional, but worth it]
3/4 t sea salt
1 T light brown sugar
1 3/4 t instant yeast or bread machine yeast

if using a bread machine: place all ingredients in order recommended by manufacturer.

if not using a bread machine: in a large bowl, proof your yeast in warmed up water [about 100F] and sugar, whisk and let sit for 10 minutes.
mix in rest of ingredients, go slowly with the flour. once it gets too hard to mix with a wooden spoon, pour everything on a clean surface, and start kneading for about 7 minutes, until the dough is smooth and elastic.

place in a very lightly greased bowl, turning the dough around to have it covered with oil. cover with plastic wrap, place in a warm, non-drafty area for 90 minutes, or until doubled in size.

if using bread machine: take out dough from machine.

if not using bread machine: take out dough from bowl.

for both methods: place your dough on a lightly floured clean surface. punch down your dough, divide it into 12 equal-ish pieces. roll into a rope, and twist it a few times. seal ends. place on lightly greased baking sheet [you'll need two of them].

once you’re done preparing all rolls, cover them with plastic wrap and let them rise for another 50 minutes, in a warm, non-drafty area blahblahblah.

preheat your oven to 375F. once it has reached the right temp and that your rolls have had time to rise, bake them for 13 minutes or until golden brown. let cool on a rack and enjoy!

  4. Speaking of beer, I wondered if you’d let me publish some of your testing recipes on my blog? People keep awwing and oooowing at the pictures but when I direct them to your blog, they say they don’t speak English or can’t work with the cuppity thing… And believe me, those recipes need international recognition! ;)
