coconut peppercorn tofu, heirloom tomatoes & jasmine rice

with orange muscat vinegar, seasoned rice vinegar, and hot chili oil. I have a “thing” for that oil, to which I was first introduced by Isa’s dipping sauce recipe in VWAV.
edited: my bad! it’s actually not in this recipe that I used hot chili oil. I used extra virgin olive oil. I’m losing my mind, as if you needed more proof.
the tofu is cooked the usual way (*) and at the end of cooking, is covered with a mixture of 1/4 cup of plain soymilk, 3 T coconut flakes, 1 1/2 t peppercorn of various colors, 1 1/2 t dried basil.
the jasmine rice was cooked in vegetable broth in the almighty rice cooker. could it be any simpler? I think not. I also added a few thin strips of white onion.
sorry about it not being a real recipe, but I’d feel so silly writing something up for something so…simplistic, yeah.
if I still can stand looking at cookies, I’ll re-try the double chocolate stout one I had been working on in order to post it soon. sorry for being a bit quiet on your comments and posts [all of which I am definitely at least reading!], hopefully it goes back to normal soon.
* I fried cubes of 16oz of super firm tofu in 1 T of peanut oil on medium high heat, let it work its magic for about 10 minutes, turning it often in order for every side to be crunchy and brown.

ohhhhhhhh yum that tofu sounds good. i’m always looking for new ways to cook tofu and i love coconut so i must try this!

thank you!!! I actually made a mistake when saying I used hot chili oil in the salad, it was extra virgin olive oil. I am losing my mind! ;p
