Chocolate Chai Snickerdoodles

Chocolate Chai Snickerdoodles

1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1/4 t cinnamon
1/4 t dry ginger
1/4 t ground cardamom
1/8 t ground allspice
1/16 t ground black pepper
2 T unsweetened cocoa powder
1/4 cup softened vegan margarine
1 Ener-g Egg replacer [1 1/2 t powder + 2 T warm water, whisked until foamy]
1/2 t pure vanilla extract
1/2 cup + 1 T AP flour [do not spoon it, scoop it!]
3/8 t baking powder

preheat oven to 350F. prepare cookie sheet with parchment paper or Silpat.

mix sugar and spices in small bowl. remove 2 T cup. add cocoa to small bowl with sugar/spice and stir to blend.

beat butter until fluffy. add cocoa mix and beat until creamy. add egg and vanilla, then flour and baking powder until combined.

form 1 1/2 T balls. roll in sugar, place 2 inches apart on cookie sheet. flatten a bit as these cookies don’t spread out much while baking. bake for 13 minutes. let cool before transferring.

makes 6 cookies

veganized & adapted from this recipe, whose author adapted it from a cookbook too: therefore, this has got to be one of the most “adapted” recipe known to man. and woman. and cat.

  18. Celine! HELP! You’re recipe says “2 T cup unsweetened cocoa powder” and this is confusticating me. Is it 2 tablespoons PLUS a cup or 2 Tablespoons or a cup or less than a cup (eek!). Ta muchly, I wanted to make these for my Dad tomorrow but I think I’m going to run out of time :( (my fault, not blaming you!)

  22. wow, i finally made them! they’re quite awesome, i should say, although next time i’m going to up the spices because i’m such a sucker for them. but they’re brilliant! there are only two left for my parents - i’ve eaten the rest ._o but, well, i deserve it - half a week without baking and without home-made sweets. sheesh!

  25. I just made them and Tony and I think they are incredible! I doubled the batch and used pumpkin pie spice instead of the individual ones. I do have a question though, was your dough sticky? I had to freeze mine. Now I am not sure if I did not use enough flour (I double the recipe while kids/cat were screaming for dinner) so I may have not doubled the flour. But it turned out great putting the dough in the freezer! They are perfect!

  27. I’m fairly certain you mean white pepper, not black. I made them using the recipe from the other blog with white. I wouldn’t think black would taste very good!

  31. I don’t like chocolate, so do you think they will still be good if I left out the cocoa? I love chai tea and I can’t find any recipes for a chai cookie without chocolate!
