Tequila Cookies

tequila cookies

tequila cookies, since heeze asked for something made with tequila. [sidenote: I promise I'm done with alcohol-baking for a little bit.]

wanna be daring? add 1 t or more of chopped jalapeño bits!

3 T chopped dried cranberries
3 T tequila
1 T fresh lime juice
1 T triple sec
1 t lime zest

1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1/2 cup all purpose flour [just scoop and level, no need to spoon]
1/2 cup whole wheat pastry flour [just scoop and level, no need to spoon]
2 t Ener-g egg replacer powder [NO water!] [you can use cornstarch if you can’t find Ener-g]
1/4 heaping t sea salt
1/2 t baking powder
3 T plain soy milk [or other milk alternative]
3 T safflower oil or other mild flavored oil

preheat oven to 350F. line your cookie sheet with parchment paper or Silpat.

in a large bowl, place flours, sugars, egg replacer powder [or cornstarch], salt, baking powder, and whisk to mix well. pour in oil, soy milk, and cranberries/lime/tequila mixture. stir until well combined.

place about 2-3 T worth of cookie dough onto your sheet. you can make 6 large cookies or 8 medium ones.
flatten a bit, as these do not spread much while baking.

bake for 18 minutes or until set and lightly golden brown.
let cool on sheet for a few minutes before placing on cooling rack.

makes 6-8 cookies.

  5. I only like golden raisins right now. and even, the less of them I see, the better I feel.
    there’s a tee on threadless.com on which it’s written something like
    “keep your raisins off my cookie” or something like that

  6. I hope they make it to you today, VeggieGirl! keep in mind they were mailed on Tuesday after a holiday, and you know how USPS can be taking it easy after having days off so as not to, you know, twist an ankle or something. ;p

    Unluckily, I’ve promised my boy to bake only on occasions (like, Sundays or his teaching me what to do with C or TurboPascal) now that I’ve got _programming_ to learn (what the heck?!). This doesn’t mean I don’t spend twice as much time salivating over your gorgeous recipes, though.
