Pineapple Blueberry Muffins

makes 6 standard muffins
1/2 cup all purpose flour
1/2 cup whole wheat pastry flour
1/4 cup brown rice flour [can sub more AP or WWP flour]
1/4 cup coconut powder [simply blend 1/3 cup shredded coconut until it turns into powder]
1/2 t baking soda
1/2 t baking powder
1/4 t ground cinnamon
1/8 t ginger powder
generous pinch sea salt
1 1/2 t Ener-g egg replacer powder [no water!] [if you cannot find Ener-g where you live, just skip this step. the soy yogurt is doing the part of the egg. OR you could use cornstarch instead, but it's not necessary]
1/4 cup light brown sugar, packed
6oz vanilla soy yogurt = 1/2 cup
1/3 cup pineapple chunks, cut into small pieces
1/3 cup frozen blueberries [don't let them thaw to avoid having the batter be completely blue: it's sad enough as it is, poor batter!]
1 t pure vanilla extract
2 T safflower oil [or canola, vegetable, grapeseed...]
about 1 1/2 T agave nectar, for muffin tops
drain chopped pineapple chunks well.
preheat oven to 350F. line standard sized muffin pan with muffin liners.
in a medium bowl, sift together flours, baking soda, baking powder, spices, salt, egg replacer powder. whisk together with coconut powder.
in a large bowl, whisk together sugar, soy yogurt, vanilla, oil. throw in pineapple bits.
combine dry and wet ingredients, do not overmix. fold in blueberries.
divide the batter into six muffin liners. squirt about 1/2 t of agave nectar on top of each muffin. bake for 25 minutes.
chill on cooling rack.

your read my mind. i have leftover coconut flakes AND leftover pineapple (well, crushed but i suspect it’d work all the same), except i should finish all the muffins i have in my freezer first. hehe.
