Presto Pesto Orzo Cannellini Salad

Rich in flavor and deliciously refreshing during the summer, you could also replace the orzo with another shape of pasta, or even rice. Using homemade pesto would be of course the easiest way to ensure it doesn’t contain Parmesan, the way store-bought pesto often does

6 tablespoons (96 g) prepared pesto
1/4 cup (60 ml) seasoned rice vinegar
1/4 cup (40 g) chopped red onion
4 cups (676 g) cooked whole wheat orzo
2 cans (15 ounces, or 425 g) cannellini beans, drained and rinsed

Whisk together pesto, vinegar, and onion.
Stir in orzo and beans, until thoroughly coated.
Serve chilled.

Yield: 6 servings

    yum! I just bought 2 cans of cannellini beans, so I’m definitely going to make this!! I haven’t had pesto in ages…
