Presto Pesto Orzo Cannellini Salad

2 cups cooked whole wheat orzo [= approximately 1 cup uncooked. cook 8-10 minutes if the company you buy it from is too lazy to mention it.]
3 T prepared pesto of your choice
1 14oz can cannellini beans, drained and rinsed, and drained some more
2 T seasoned rice vinegar
about 2 T white onion, sliced thinly
mix everything in a large bowl, being careful not to smash the beans and orzo while doing so.
serves 2-3.

yum! I just bought 2 cans of cannellini beans, so I’m definitely going to make this!! I haven’t had pesto in ages…
