Matcha Chocolate Ice Cream

YUM! and truth be told? I’m not even a matcha powder fan!

original recipe

1/2 cup granulated sugar
1/2 cup pure water
1 teaspoon mirin
1 tablespoon matcha green tea powder
1 cup soy milk [or other milk alternative]
1 cup full fat coconut milk [don't shake the can, delicately spoon off the creamier part of the coconut]
1 t pure vanilla extract
1/2 t pure almond extract
1/4 cup finely chopped (or grated) dark chocolate
1/4 cup chopped almonds

in a small saucepan, stir together water and sugar. bring to a low boil and let simmer for 5 minutes.
add mirin and remove from heat immediately.

in a small bowl, whisk together matcha powder with 3 T of water/sugar mixture. whisk until well blended.
throw in saucepan with the rest of water/sugar mixture, the milk alternative; return to heat and let cook until the matcha is completely dissolved and blended.

remove from heat and add coconut milk and extracts. let cool completely before putting in fridge and letting chill for at least a couple of hours, even better, overnight.

place in ice cream maker and follow manufacturer’s instructions. throw in chocolate & almonds during last 5 minutes of churning.

if you prefer a firmer ice cream, place in freezer for another hour.

serves 3.

  1. YUM! I’ve been needing something to do with my Green Tea Powder. I bought some about 5 months ago and it’s still sitting in my cupboard all sealed up (plus I’ve finished off that whole container of choc pb ice cream of yours!)

    I’m still on the hunt for matcha. I’ve found some with milk added - but that does me no good. This is going right to the top of the list of things to do with it after I track some down.

    Vege, I’m not surprised you finished it, it’s been a while. I’m ashamed at how quickly I can consume any sort of vegan frozen treat, really.
