these cupcakes are not for the faint of chocolate.
if you prefer a more subtle chocolate taste, go for good old unsweetened cocoa powder instead of the D-process one.
be sure to choose a soda that does not contain high fructose corn syrup, for your health!
you could also replace it with a strongly brewed coffee to which you need to add at least 1/3 cup sugar. [brew your coffee, measure it, add sugar and stir to have it melt. let cool completely before adding to cupcake batter.]

too much chocolate for you, cupcake

makes 12 cupcakes

1/2 cup vegan margarine, softened
3/4 cup + 2 T condensed soy milk [be sure to let it cool down before using]
1 cup self-rising flour [= 1 cup all purpose flour + 1 1/2 t baking powder + 1/2 sea salt]
1/2 cup Dutch-process cocoa powder
1 t baking powder
1/4 cup vegan chocolate chips
generous 1/2 t pure vanilla extract
3/4 cup organic cola or other favorite soda

preheat your oven to 350F. line your cupcake pan with paper cups. coat the liners with non stick cooking spray.

in a large bowl, cream your margarine for a couple of minutes. add condensed soy milk and beat until combined.
in a medium bowl, sift flour, cocoa, baking powder. stir in with wet ingredients, add chips, vanilla, and soda.
drop spoonfuls of batter [it is rather liquid!] into paper cups, and bake your cupcakes for 18-20 minutes, checking them with a toothpick after 18 minutes.

let cool five minutes in pan before removing and placing on cooling rack.

decorate with powdered sugar just before eating, if you’d like.

  3. I used “fufu berry” soda by Jones [which uses cane sugar instead of anything too unhealthy] and I could taste it more yesterday than I could today. for some odd reason. so the answer is, I guess, not really. :)
