PB rice and ohs treats & SuperTofuMan

all cut up, and ready to go

this one worked really well with the nixed dry sweetener, woo! I made a version without chocolate for a change.
still adapted from the How it all Vegan recipe…

1 scant cup vegan cocoa puffed rice
2 scant cups plain vegan cheerios
1/2 cup natural creamy PB
1/2 cup brown rice syrup or dark corn syrup or organic corn syrup or maple syrup or…you get the idea
optional: chocolate or carob chips

mix PB & syrup together well, add cereal and optional chips, press firmly in an 8×8in cake pan lined with parchment paper. place in fridge for a few hours to let set/harden. cut in however many pieces you want.

super crispy super firm super curried tofu

I could eat this by the bucket. same for the treats, as a matter of fact. basically, if I could only eat 2 things for the rest of my life, those would be it. I sound like a broken record putting this recipe [and the one for the treats] up, but I can’t look up the previous times I posted similar recipes because of a spotty internet connection, so bear with me. I promise I’ll renew myself soon…especially considering I need to cut back on the eating, some.

1 generous T peanut oil
1 16oz slab of super firm tofu [or extra firm, pressed], cut in length, into thin slices
1/3 cup unsweetened soy milk
2 t mild curry powder
1 t dried basil
2 t agave nectar
fresh ground black pepper

heat oil in a large saucepan. add tofu slices, don’t overcrowd your pan! let cook on each side for about 6 minutes, until golden brown and crispy.
whisk together soy milk, curry, agave, & BP. throw on top of the now cooked tofu slices and let evaporate, turning slices over once in the process.

    i must make those rice treats! i’d like to get brown rice syrup, but for now i think i’ll settle with maple.

  2. oooh, the that photo of the pb-treats is calling my name!! the recipe sounds so straight-forward, yet I’d never be able to cut the bars correctly, haha.

    I’ve made rice krispy treats once since going vegan and I was a little disappointed with the results. I’m sure yours would not disappoint though!
