aubergine for the win
October 4, 2007 at 8:05 am | In Uncategorized |I’ve been craving basic vegetable dishes lately, so after getting a big serving of deliciously fresh, perfectly pressure cooked green beans drizzled with just a hint of seasoned rice vinegar yesterday, today was the eggplant’s turn. and "she" liked it.
I toyed with the idea of throwing in 1 28oz can of diced tomatoes [drained], but the smell and look of the eggplant alone were so appetizing that I nixed it.
it almost sounds ridiculous to tell you how I did it since it is so basic and simple, but here it is anyway.
1 small to medium eggplant, chopped into bite size pieces
1 T peanut oil [any oil will do]
2 medium garlic cloves, pressed
2-3 T chopped shallot
1/4 cup chopped fresh parsley
salt & pepper to taste [I didn't bother]
heat oil on medium high, add garlic & shallot, let cook for a minute. add eggplant, let cook on medium for about 8 minutes, stirring often. add parsley and let cook for another couple of minutes, or until eggplant is tender.

now i’m kicking myself for not picking up what was, easily, the best lookin eggplant i’d seen at the grocery of late. note to self. always trust instincts while food shopping. celine is sure to have just what it is i’m craving! ;)
