Nooch Oatmeal Bundle O’Carbs

have you ever had something you baked yell “BITE ME!” at you? or do I hear voices?
not that there is so much nooch in this baby, but I’m running out of ideas on how to call them breads.
as usual, check this out if you don’t have a bread machine. I just had mine rise in the bread machine, the rest was done “by hand”.
they don’t have a strong “nooch” flavor, so feel free to add more if that’s what you’re going for, perhaps 4 T and removing 2 T of flour. I like them the way they are, personally.
for 8 rolls:
1 1/4 cups rice milk [heated to about 100F if stored in the fridge]
2 T vegan margarine
1/2 cup old-fashioned oats
1 1/2 cup bread flour
1 1/2 cup whole wheat flour
2 T nooch [aka nutritional yeast]
2 T vital wheat gluten
1 1/4 t sea salt
2 t bread machine yeast
place all ingredients in your machine in the order recommended by manufacturer. set on DOUGH.
prepare 1/4 cup baking soda with 2 cups hot tap water. mix well until soda’s dissolved.
preheat oven to 375F. prepare your cookie sheet with parchment paper or Silpat.
remove from bread pan, place on a lightly floured surface and cut into 8 equal parts. roll into an about 12-inch rope and twist almost like a pretzel.
dip into soda mixture, place on prepared cookie sheet. sprinkle with coarse sea salt.
bake for 18 minutes, or until rolls are golden brown and sound hollow when bottom is tapped.
let cool on a rack.

Those look really good! I made your bagels again yesterday. I did a little experimenting and I did not put the hole in one of them. I loved it. Thanks for the great recipes!

ok, got me there: I have no clue!
I promise they’re not that time-consuming! especially since there isn’t a second rise.

I gotta say, I make a variation on these once a week. Everyone loves them so much! I have been trying all sorts of crazy liquid/flour/spice combinations. Thank you for this recipe!!!
