another batch of bundle o’carbs and mini cupcakes

[ok, where did that come from?]
same M.O., different recipe for the dough itself.
1 cup + 2 T soy milk [heated to 100F if stored in the fridge]
3 T agave nectar
2 T vegan margarine
1 1/2 cups bread flour
1 1/2 cups + 2 T whole wheat flour
2 scant T vital wheat gluten
1 t sea salt
1 1/2 t bread machine yeast
the following ingredients do not come into play until right before baking!
soda mixture:
1 cup hot tap water
2 T baking soda
black sesame seeds for decoration

mini cupcakes from the sexy low-fat vanilla recipe in VCTOTW. topping is a PB “syrup”, simply made with blended silken tofu, natural crunchy PB, & far too much powdered sugar for the dentist’s liking.
alas, I have no idea of the exact amount I used as I just tried to finish up leftover tofu and peanut butter. don’t hate!
it looks runny, but it isn’t: it’s got the texture of a nice thick syrup, sticky and delicious.

these bundles are even tastier than the ones from the other day: I just had one and the dough is so fluffy and delicious, yay! now I need to go burn that energy. ;p

I think I ordered the mini cupcake liners from kitchenkrafts.com, but if you live in a less … how shall I put it? ok, if you live in a BETTER town than I do, I’m sure you’ll find them in a good gourmet kitchen shop of some sort.
