carob PB fudge cookies

recipe adapted from Simple Treats

I made changes to the original chocolate PB fudge cookies a while back: I used to not be so keen on carob, but these cookies definitely changed that fact and I find myself making this version even more often than the chocolate-based one.

for about 20 cookies

1/2 cup oat flour [simply grind quick oats in your food processor, about 3/4 cups of it to get the 1/2 cup]
1/2 cup + 1 T maple syrup
1/4 cup + 2 T vegetable oil
1 cup crunchy peanut butter
1/2 t pure vanilla extract
1/2 cup carob chips
5 T barley flour
1/2 cup + 1 T carob powder
1/2 t baking soda
1/2 t baking powder
1/2 t sea salt

preheat oven to 350F. prepare cookie sheet with parchment paper or Silpat.

in a medium bowl, mix together syrup, oil, PB, and vanilla.

in another medium bowl, sift together barley flour, cocoa, baking soda, baking powder, and salt.
add oat flour and carob chips.

combine wet & dry ingredients, stirring well with a wooden spoon.

drop about 1 1/2 T worth of cookie dough onto your prepared cookie sheet. flatten your cookies, as they do not spread at all while baking. bake for 8 minutes, or until cookie is set.

leave cookies on sheet for a few minutes before placing them on the cooling rack.

    I use carob pretty frequently (although not so veganly, but my recipes are easily veganized). Looking forward to trying out your carob cookies. They sound fabulous!

  10. I made these for my family’s huge thanksgiving get-together and they were a hit! This was my first experience with carob…now I’m hooked! They are dense and so so chocolatey (I used vegan chocolate chips in place of carob chips). I really appreciated that there was no refined sugar in these! Thanks, I love your blog ;)
