Oreo Cookie Cookies

a sea of oreo cookie cookies, testing for an order…I’m thinking some of them will find a new home at the neighbors’ because we have a lot of [too many] baked goods in this apartment right now.
they work really well since I corrected the recipe, so much so that I’m thinking of baking a batch or two for the next Cat People meeting on October 30.

speaking of which: I’ll be volunteering at their shop this coming Friday and taking pictures of the shop and adoptable cats for the newsletter and I think for their petfinder page. needless to say I am excited!
sidenote: I can’t believe Missy is still up for adoption. she’s been on there forever! she looks a lot like Buffy and if we could, we’d definitely take her in too.

Caro-Lua or Kah-rob Cookies

Ca-Lua cookies: Kahlua cookies [from ExtraVeganZa] but made with carob powder and carob chips.

not pictured here, but I also made a batch of coconut chip cookies for a friend, along with chocolate PB treats. the coconut chip cookies [recipe from la dolce vegan] had the same issue as the oreo cookie cookies. namely: flatitude with a capital F. Flatitude, I guess.
I corrected a few things and BAM! they’re back to behaving too.
for half a batch:
- 1 less T Earth Balance [not Whipped or buttery stick] margarine than what is called for
- 1 full Ener-g egg replacer instead of half of one
- flour scooped, not spooned + the addition of 1 T

ta-da! oh, one last cookie thing: I’ll post the recipe for the chocolate igloos soon, I haven’t forgotten. been a bit busy over here these past few days and it’s not over yet.

  3. I thought I was going crazy. I’ve tried several cookie recipes from La Dolce Vegan and The Garden of Vegan and had them come out flat. I wonder if the cookbook author lives at a different altitude than you or me? Could that affect how they turn out?

(I was thinking how awesome it would be if you or they could make postcards out of the pictures you take of the kitties, maybe with a little story about them, and sell them in their store!) Anyway!     I’m ashamed, Mihl, I haven’t had a chance to visit the neighbors yet! the cookies are still here and beckoning me with their siren song. meep!

    oh it’s not just you Jackie, rest assured! it can depend on so many things: ingredients, oven temp…I’ve been having a lot of issues with it lately [when the same recipes used to work just fine before] but adding a touch more flour has proven to be quite successful. and sometimes cutting down on the margarine helps too, which also has the advantage of cutting down on calories. more cookies with less guilt!

    Liz, I’m still unsure what I will be talking about and fretting about it a little bit. hopefully I can come up with something not too lame.

    Bazu! you rock more, and I noticed I forgot to credit you for pointing me to the site. I’m happy to report this has now been taken care of! <3

    I’m happy to hear you have a TJ around, Sarena! I don’t know what I’d do if I didn’t have one nearby. already have to make do without Whole Foods or Wild Oats in this town. :(

    once again, you come up with a brilliant idea Sarah! we need to work on what you mentioned before. I wish there were more hours in a day because there’s soooooo much I feel I should be doing and I never get around to doing 1/2 of it. meh.
