pistachio rosewater cardamom cookies

pistachio rosewater cardamom cookies, based on the lemon lavender cookie recipe. instead of lemon extract, I used the same quantity of rosewater, added 1/4 cup chopped pistachios as well as a pinch of ground cardamom for a total of 18 cookies. I also used rice milk instead of coconut, since I didn’t want to open a whole can just for 1 T of the stuff.

peanut butter rolls. based on this and this, except I made 8 rolls instead of 6 buns.
I also used warmed up rice milk instead of water, as well as 2 cups whole wheat flour/1 cup bread flour.
I baked them on a Silpat-ed cookie sheet for about 15 minutes at 375F. be sure to keep an eye on them as PB bread has a tendency to brown faster than other breads.

I’ve updated about it on my other blog, but not here so I thought I’d mention I will now be a bit busier working with that local cat group I’ve mentioned before, The Cat People, which will probably make for somewhat less regular updates over here. probably going from 4 times a day to 2? who knows.

I’ve made several tasty things in the past few days but basically just slightly adapted from previous recipes, so I won’t write about them. lots of veggies in my belly though!

    Mmmm those cookies sound delish! I’m trying so hard to be on a baking ban but with your posts incoming into my reader every day I’m finding it terribly hard to resist. I LOVE rosewater, and cardamom, not sure about the nuts, never tried them before.

    And that kitty! I’m in love! What a sweet little face!

    Aw to the max! That is an adorable kitty, those eyes, that little scarf! Good luck with the new job, it looks awesome if you get to hang around cuties like those.

    Ash, the bandana cat is actually not part of the Cat People ones, it’s a neighborhood cat that I’m dreaming of cat-napping and keeping to myself forever. no worries, that won’t happen as I am no cat-snatcher but one can always dream, right?

    it’s never too late Hannah! if you ever feel like it, of course. I can only imagine the wonderful pics you’d bless us with if you got a kitty companion. :D

    Bandana cat’s eyes are incredible! I don’t think I’ve ever seen such green eyes. I love the look of the cookies at the top, the pb rolls would surely be a hit around here because I’m basically addicted to peanut butter, and like others say–good on ya for that work for The Cat People.
