Disco Stew

I suddenly noticed I never posted the recipe for this.
a tip? it tastes far better when it sits for a couple of days. or if you freeze it. beer!!
serves 6
2 T peanut oil [other oil works fine]
1/3 cup chopped white onion
2 cloves garlic, pressed
1 big Russet potato, brushed clean, peeled, chopped in small pieces
1 8oz package of tempeh, chopped in small bits
1 14oz can diced tomatoes [undrained]
2 T chili powder
2 t ground cumin
1/2 t dried oregano
1 squirt agave nectar [about 1 t]
1 14oz can kidney beans [drained and rinsed]
1/3 cup frozen green peas
1 cup vegetable broth
1 12oz beer bottle [your choice which kind]
in a large saucepan, heat oil on medium high for a minute, add onion, garlic. let cook for a minute. add potato, tempeh, and let cook on medium heat for about 7 minutes.
add tomatoes, spices, nectar, beans, peas, broth, and beer: bring to a boil, cover, and let simmer for 20 minutes or until potato bits are tender.

Yea …I’ve been waiting for that… It’s really turned fallish weather now, this will be yum!
And thanks for the tip…yes, actually many things taste better with time and often left overs are far tastier than the first time they are served. Good luck with all your extra work helping kitties, I’d love to help you there!
