Chicky Grahams

for about 50 chicky grahams. [keep in mind my cookie cutters are tiny...]
1 cup all purpose flour [spooned in measuring cup and leveled]
3 T unsweetened cocoa powder [or carob powder]
3 T organic sugar
pinch sea salt
1 t pure vanilla extract
1/4 cup vegan margarine
2 1/2 T cold chocolate soy milk [or other milk alternative, not necessarily chocolate-flavored]
place all ingredients EXCEPT “milk” in a large bowl or your Kitchenaid mixer bowl and mix until combined. add milk alternative until a cookie dough is formed.
you might want to wrap the dough in plastic and let it chill for an hour in your fridge.
prepare your cookie sheet with parchment paper or Silpat. preheat oven to 350F.
roll down the dough on a clean surface, keeping them rather thick like the cheezy quackers this recipe is based on, and go cookie-cutter happy on it!
bake for 14 minutes or until set. let cool.
sidenote: in the battle of good quacker versus evil chick, who wins?

Hey C., hopw do you think these (and the quackers) would work if one used a slightly bigger cookies cutter? Would they work as a slightly larger cracker? Both sound awesome, btw!

i have had no luck finding vegan graham crackers in stores. well duh, it never came to me that i could make my own.

In response to Textual Bulldog, I baked these quackers using larger cookie cutters, and they were just fine. Addictive, actually.
But Celine, I’m sad to say that that evil chick totally looks like it could kick the quacker’s ass. (Don’t worry little quackers! I’ll hide you! In my belly! mwahahaha)

TB! almost everyone who’s tried these used far bigger cookie cutters, and I got no complaints! just be sure to watch for baking time and let them get a bit golden and set [hard, really] in the center.
they’re not bona fide graham crackers, Hil, but that’s what my husband described them as being like, so I went with it. :)
ha! what better place to hide quackers than in ze belly, B. I totally agree. I’m trying something today: shipping them in a bubble wrap envelope to lower shipping cost to see if they survive the trip well or turn to sand. I think they’re sturdy enough to make it.
