Lolo’s Kale & Sundried Tomato Hummus

the hummus recipe is slightly modified from Lolo’s Kale & Sundried Tomato Hummus: all I did was add 1 huge garlic clove [pressed], a little less tahini [because I'm not a fan, oopsie!], a little less olive oil, and a little less water too. I re-plumped my sundried tomatoes by bathing them in boiling hot water for about 5 minutes. I threw in a little italian herbs, and that’s it for the mods.
Lolo? you rule. I never know how to use kale but ever since someone mentioned they went bananas when they don’t get their daily green veggies in, I’ve started feeling that way too.

I eat kale on a daily basis (well, I do switch off between kale, swiss chard, and spinach - but I eat those leafy greens every day) - this hummus recipe sounds FANTASTIC!!! sundried tomatoes + kale + both incorporated into hummus = too perfect for words.

I’m so glad you liked it! I assume that people add garlic to all of my recipes, since, you know, i’m such a hater. i cooked with garlic last night though! i just didn’t eat it.

A good reminder to eat greens…I”m often guilty of not meeting my quota. I might be making this again for a party next week, sneaky of me, huh? I’ll bet your bread goes wonderfully with it!

Mmm, I love kale, and this sounds like an awesome way to eat it. I need to set myself a peronal goal to eat greens every day. I love them anyway, so why not? This sounds like a lovely way to get some greens, too.

Mmm. that hummus looks good. Maybe I’ll pick up some kale at the market tomorrow. I love green veggies, and just don’t seem to eat them often enough. I always feel very healthy and virtuous when I do, though. :)

Another great way to eat greens is in a “green” smoothie–frozen fruit and greens all blended together until smooth and creamy…it looks gross, but it tastes so good! And you can’t even taste the greens (although I DO like greens, really I do!)!

That looks so good! I am dying for some good greens. I tried to sneak some in the other night and I was told they wanted green beans! I love kale! I will have to try this! I bet roasted garlic would be great in it too! I can’t wait…

i’ve never had kale in anything or by itself though. hummus seems like a perfect way to incorporate it for the first time.
target is the best for chocolates. i stock up when i go there too :D the orange one sounds yummy.

This blueberry wheat ale bread looks so dense and wonderful. What a lovely looking (and I bet, tasting) combination with the slight bitterness of kale…sounds like a good way to get your veggies, indeed!
