Wah-Wah! RRF’s UN-cakey cookies still came out cakey for me!

I followed the recipe and made them as thin as could be, and yet. bah!
BUT I made the following pumpkin scones, and those turned out really well. I guess I won’t burn my apron just yet…
using this recipe, except I used a mixture of half sour cream, half unsweetened soy milk for the heavy cream. and I didn’t add raisins. oh and I used EB buttery sticks instead of the butter.
I used the ginger molasses icing recipe too, but more than halved it.
ps: I’m seriously dying to take a trip to LA soon in order to go to Scoops and other delicious places. December, if all goes well…right, Bazu?

YES!! I’m SO glad you made a vegan version of these scones - Nicole had asked me to tell her how they’d turn out, if I made them, but the recipe intimidated me, haha. Thanks for taking the pressure off! :0)

Pumpkin scones! And I have a pumpkin on my table right now…hmmm…never mind that I have a loaf of banana-coconut-rum bread in the oven right now. I wish I could bake as much as you!

Nicole did, Liz? OOPS! I’m sorry I did it before you had a chance! I’m sure you’ll do perfectly. I forgot to mention, I was almost out of light brown sugar so I subbed 3 T of sugar in the raw for it. I think you can even see the crystals on the pic. ;p

A lot of cookies I make have a tendency to be cakey as well; drives me batty. The icing on the scones is a nice touch!

Oh, that looks so wonderful. I love the sour cream/milk idea for a heavy cream substitution- perfect!
Oh, and Celine, my trip to California will NOT be complete without you! And scoops! But mainly you… but also scoops. =)

The pumpkin scones look so good! I saw pumpkin spice Silk at the store the other day. I may get some and use that for the heavy cream! I think I need one of your pumpkin scones and a cup o’tea right about now!

Like Sarena, I caved in on the silk pumpkin spice and these scones have my eye and belly on the hook–can’t wait to give them a try using the silk! They look fantastic, as does all your stuff.

Crunch, num, num…is sound if me gobbling up pumpkin scones. My favorite scone before going vegan was the Starbucks, maple oat. I think these could rival them.

Heck yeah Vegyogini, we can’t let Celine come to L.A. without a fabulous food fest! With all of us there, the kitchens at Pure Luck and Scoops will probably be left empty!
Good thing it’ll be December and not now… it will probably take until then for all the damn smoke to clear.

I took pics but then it broke my heart to see them so I didn’t keep them (the pictures, I kept the cookies of course!). :(
I have no clue! did you spoon the flour into the measure or did you just scoop the flour up directly? I scooped. I also halved the recipe, but that’s it! I flattened them a lot before putting them into the oven. was your dough very sticky too?
