Chickpea Cutlet with Eggplant Stew

holy flying aubergine on a wild coconut ride: if you don’t agree that these [baked] cutlets are even better after taking a trip in the freezer, I’m becoming a nun! and don’t disagree just for the hell of seeing me wear the habit, dudes.

the eggplant stew goes soooooo well with it too,
it’s yet another recipe born out of boredom, need, & leftovers from the fridge and freezer. just be sure to have cooked rice or other whole grain at the ready, and to grill your eggplant beforehand so that it really takes no time to prepare this dish. you could also cook it in the pan directly, but be sure to maybe use a touch more oil than the recipe calls for and to let the eggplant cook until it’s a bit softer before throwing the rest of the ingredients in. stating the obvious, much?

serves 4

3 cloves garlic, pressed
1 medium shallot, minced [about 2 T]
1 t olive oil, to prepare shallot/garlic in saucepan
generous pinch ground cumin
generous pinch dried thyme, crumbled between fingers
2 t whole peppercorns of various colors
1 T tomato paste
1 cup light coconut milk
1 cup pumpkin puree
1 1/2 cup black rice, cooked in vegetable broth [you can use any other firm whole grain like brown rice, pearl barley, etc...]
1 medium eggplant, cut into 1/2 inch slices, brushed with olive oil, grilled, then diced
1/4 cup fresh parsley, minced
generous pinch sea salt, or to taste

in a large saucepan, heat the oil and cook the onion and garlic until fragrant. add the spices and let cook for another minute on medium high heat.
add the rest of the ingredients and stir well. lower the heat and let simmer, covered, for 15 minutes. serve hot.

  2. I do agree with those a lot! I am planning to make them although there’s still no gluten flour around. I thought of mashing some seitan/tofu or chickpea flour into them, let’s see.

    Whatever you make out of boredom and leftovers, I am willing to try it. I’m in love with those eggplants.

    the cutlets with the BBQ sauce and eggplant stew DO look great - best-looking leftovers I’VE ever seen!! is that BBQ sauce super-sweet or no?

  4. Liz: the bbq sauce is really not that sweet. but the apple butter I use is unsweetened, so that might be the reason why. :)

  6. I made some chickpea cutles from V-con last night, man I should have paid attention and doubled the recipe. Now I only have one lone chickpea patty left and that’s going in my tummy at lunchtime today.
    I got some thai eggplants at the farmer’s market yesterday, but know nothing about them. Do you think they would sub in most recipes for regular eggplant? Looks like a yummy stew!

    I’ve never heard of Thai eggplants! I can’t say if they’d work well or not for this recipe, but do keep me posted V_N, and if you don’t use them for this recipe, keep me posted anyway! I love learning more about less common [I guess they are?] vegetables!

    Er… I have yet to make the cutlets… I need to get back into the kitchen, I tell you!
